Peach Salsa 4

I love peaches. For me, peaches are the best thing about summer. Right up there with beaches. Rhyming coincidence? Spelling happenstance? Unlikely.

Summer is usually way too hot to be an enjoyable season here. But as long as I can get my summer’s worth of peaches, I’ll try not to hold that against it.

This is a really simple recipe that I just made up on the spot, which means that it’s also really simple to modify to work with whatever you have on-hand. Mango? Sure! Nectarines? Basically peaches without the fuzz, saves you a step. Kiwi? Well that’s what I used, so I say go for it.

Peach Salsa

I’ve been eating this folded up inside quesadillas with a little pepper jack cheese. It would be delicious with my favorite black bean patties, which I obviously need to make again so I can share them with you!

Peach and tomato salsa

  • 2 peaches, peeled and chopped
  • 2 small (or 1 medium) tomatoes, seeded and chopped
  • 1 kiwi, peeled and chopped
  • 1/4 red onion, minced
  • 1 jalapeño, seeded and minced
  • juice of 1 lime
  • 1/4 teaspoon salt (or to taste)

Combine all ingredients. Consume.

    Yes, please share the black bean patties recipe. Win missed them when we were at Robin’s and your mom made them. He would like to try them and I would enjoy them again.

    Hey Erin,
    Have you tried just chopping everything together on the same block? I did that with a few salsas earlier in the summer and, I think, it added something extra. At least, I got more juice in the mix.

    This looks good. I’ll try it soon.

      I haven’t tried it *intentionally*, but I usually do chop everything on the same cutting board. Everything plant, anyway. Not meats and plants on the same one.

        Hahaha, true on the meats/plants bit. Lately I just put everything on the board all at once and cut away.
